What makes a lie a lie? Attempting to provide incorrect information or actually (inadvertently or not) incorrect information. If we assume intent is what matters, then if Pinocchio is trying to lie then nose will grow and he will inadvertently provide factual information, if Pinocchio is trying to tell the truth then nothing will happen and he will inadvertently provide incorrect information. If we assume intent doesn't matter in the realm of lying and only reality matters then I would say Pinocchio's nose would grow an infinitely small amount and then stop because at that point he would be telling the truth.
